Well, from what is briefly available in that link, what's being described is probably not N.O. native but the influx of illegal immigration population, in whose country of origin this is probably an everday, accepted thing.

If they don't have any crawdads, try the etouffee. Man oh MAN, is that good stuff!
And their red beans and rice might be the best in town.

I stand corrected, but when I lived there they came out of ditches and swamps. I googled crawfish farms, and you're on the money, although the farm raised are rather expense compared to what I remember.

They are "standard" fare in Asian restaurants now, along side the sweet & sour pork and General Tso's Chicken........plus crab legs and green mussels.......go figure......

It's crawfish season. It started Dec. 11. The farm raised crawfish season starts earlier.

Does anyone remember those big metal lawn chairs? I can remember being small enough to have to crawl up there and my evil cousin would take my Grandfather's "bait" crawfish and put one on the chair with me. I would scream and my Grandfather would rescue me! I swear they looked like lobsters to me at that age.
