I wonder what the law is on this. We know that American currency is our legal money. I wonder if the law is that only American money is permitted to be spent?
I think he sees a business opportunity if a lot of other businesses won’t take pesos.

Sales have increased 35 percent since his stores began to accept pesos in January, Swad said. That comes on top of a 34.6 percent increase in same-store sales during the fourth quarter, according to the company Web site.

CNN is highlighting this guy on their "People You Should Know" program.Typical of CNN to publish one inarticulate comment from a redneck.
Speaking for myself, as "people I should know" it serves a useful purpose. Another person I would never buy anything from; ever.
If he can't figure out why, I don't need to waste my time trying to explain it to him.

We didn't think ... that we'd be linked with the controversy that surrounds illegal immigrationReally? Well, kindly tell us what it was you were actually thinking. Perhaps along the US/Canadian border there's free exchange of Canadian currency but I've yet to see a peso passed as currency in Texas.

"Some believed the policy of accepting pesos discouraged Mexican immigrants from assimilating to American culture."
It could also be to make it easier for the thousands of Mexicans that cross the border legally every single day to give him their money.
You see this at every single border in the world and about half the cities that receive a heavy influx of tourists unless there are laws explicitly against it, then you don't see it unless you ask.
Big whoopdy doo. With out current exchange rate, an influx of Pesos would be a good thing

"We didn't think ... that we'd be linked with the controversy that surrounds illegal immigration," Swad, the founder and chain owner of Pizza Patron, told CNN on Monday. "And that's [where] we found ourselves; swimming in that water almost immediately."
Then you're as dumb as the day is long. Blackbird.
