Collards are delightful--a wilted green that is not mushy and has many health benefits. I also like Kale. Wash thoroughly in a sinkful of water, strip off fiber-y center stem, chop into big-bite sizes. Heat a handful of chopped garlic with bacon fat and olive oil (I like both) in the bottom of a *big* pan and start dropping the wet collards in. Sprinkle salt and a bit of nutmeg. Turn over with tongs to bring uncooked greens to the bottom. Stop cooking when wilted and bright green, about ten minutes. Ideally, serve with ham-hocky pinto beans, southern corn bread (white, no sugar, ). My all-time favorite meal.

I've been on a one-woman campaign to get someone to ASK this question of a pro-Amnesty elitist like Bush, Snow, McCain, etc...to my memory, no one has dared even ASK.
After many years in Texas and having observed many Cowboy/Oil aristocrats, my theory is that this would be a very tough question to face. They'd probably lose their tempers at the temerity of the question. Likely they'd refuse to answer, because the answer is probably 'yes"--cheap, available, no-hassle, servile labor is very difficult to resist, particularly over a lifetime.
The rich wimminfolk do like their criadas.
Just asking the question would change the course of the debate. It'd be awfully hard for El Padron Bush to play the "racist" card after he'd heard the question asked.

Good point. I know President Bush is a good decent man. This whole border thing is just so out of character for him. I think he is taking advice from someone and there is a reason behind it.

Can you name 20 people in the US who wouldn’t vote for Fred over (say) Hillary unless Newt was on the ticket? But there are people who wouldn’t vote for Fred BECAUSE Newt was on the ticket.
Spot on.
Fred will be wise to wait until he sees where his real electoral strengths and weaknesses are before picking a supporting player.
Right now, Fred is supposedly “lazy, unhealthy, not an experienced administrator, and looks too old.” By that logic, he should pick Romney, who is energetic, healthy, an administrator, and young.
Then again, since Mitt’s supporters are the ones who fabricated those “faults” of Fred, I think maybe we’d better hold off on that.

Make sure you clean the collards in the sink.
One time, I was helping my mom clean collards and I saw a worm ( some kind of white worm was in it ) in it, so make sure you get the worms out or else it will be extra protein.

I put a deep (12 inch) sink in my kitchen when I built—just to float-n-soak a giant mess of fresh collards. But if you want fresh veggies, you’re going to have to keep a lookout for wiggling protein. My recipe is more Italian, really, than classic Appalachian—which would overcook the greens and leave out the garlic and olive oil, or the hint of nutmeg (which I started adding when I saw Rachel Ray make Kale.)

Remember the Soul Food days? I visited a Black dude and his wife and they had a big pot of beans, pork, veggies, ketchup, flour, spices, tomato paste and beer in it. Smelling that when it was done would make you drool all over your little skirt, pants and shoes. Cook that recipe for a guy and be married forever:)
