The Jiffy Lube I have used has a big window so that you can see what work is being done. Admittedly, watching them put a fuel filter on is a little difficult.
They’re will be fuel dumping out if they change it. That’s how you’ll know if your watching them.
I use valvoline rapid oil change and they’re very professional. The one I go to actually opens a case of oil and dumps the quarts in manually instead of using the little pump from the barrel.
