I’m probably just displaying my own vast ignorance here, but “organic mercury” sounds like an oxymoron, to me.

There's "organic" and there's "organic" Most people think all natural/no laboratory chemicals when they hear the word "organic".

A chemist thinks "Ah! It is a compound that contains carbon." Chemical compounds that have carbon and a metal in them, "organo-metallics", are pretty common. The hemoglobin in you blood is one.

Metallic mercury isn't very toxic, but methyl mercury is deadly in even small doses.
