Yup, when he got to bacon it really teed me off. I worked a mom& pop processing company, from the floor, to curing, to smoking, butchering and even packaging. I've slaughtered beef, pork, venison, elk, and even the occasional goat. Don't mess with my animal protein.

BTW...there's nothing better than fresh hot cracklings on a cool fall day.

When I was on the Atkins Diet, pork cracklings were one of my basic daily food staples (along with martinis and rib-eye steaks)

I hate to admit it, but I'd never heard of pork cracklings before today. Looked it up on Wiki, and now I want to try them -- sounds really good! Unfortunately, I live in NYC, so finding them probably won't be easy; even when I'm snacking on Cheez Doodles or the like I get glares from some people like I'm clubbing a baby seal. Yummmm...seal cracklings! :-)
