Just kinda thinking out loud here...

I had gotten tired of buying tainted miscut meat from grocers and went on a quest to find a real butcher. I found a local fellow who was licensed in Germany. All of the animals that I dont butcher on the farm are sent to him, and when I dont have one he finds real quality for me.

He lets his customers watch every step of the processing and is obsessive about sanitation. Every type and size of cut are custom to my exact specification with me determining what the waste cuts are and what those are processed into.

Comparing even the poorer cuts from him to the higher end cuts from the chain stores is like comparing filet to hamburger...

...and yet its cheaper and safer.

Then again, itll be hard to get a cow home on the back of a bike.

When I was growing up we had a wonderful German butcher. My mother would send me down the street with a onion in my hand & he would add it to her fresh chopped meat. I always got a slice of whatever cold cut meat or cheese I wanted. I sure wish I had a butcher like that man again. I do eat venison & have it made into various cuts etc but nobody was as good as my mom’s butcher.. We do have a truck besides the bikes ....lol Have a great night ~Pandora~
