simple answer -- they didn't. What you call "Islamic numerals" i.e. 1,2,3 as opposed to Roman numerals: I, II, III, IV are actually Indian numerals (wikipedia it). Advanced Maths and th concept of zero came from India as well (wikipedia Aryabhatta), while the Greeks and Persians were also math-adepts and they fell to Islamic rule.
