Derby Pie
1 cup Sugar
1/2 cup flour
2 eggs (beaten)
1 cup english walnuts
1 cup chocolate chips
1 teaspoon pure vanilla extract
1/2 cup melted butter (1 stick)
1 ready-made pie crust

Mix flour and sugar. Add eggs, then butter. Add nuts, chocolate chips and vanilla extract. Mix thoroughly.
Pour mixture into an unbaked pie shell.

Bake in a preheated 350 degree oven for 35 - 45 minutes. Test with tooth pick; pie should be chewy but not runny — Bake longer, if necessary.

Kentucky Bourbon Pie
2 eggs, slightly beaten
1 cup sugar
1/2 cup butter, melted
3 to 4 tablespoons bourbon
1/4 cup corn starch
1 cup chopped pecans
1 cup semi-sweet chocolate bits

Combine the eggs, sugar, melted butter and bourbon. Add the cornstarch to the mixture, blending in slowly.
Stir in the pecans and chocolate bits. Pour into an unbaked 9 inch pie shell.

Bake in a pre-heated 350 degree F. oven for approximately 45 minutes.

Kentucky Derby Pie direct from the Kentucky Derby Museum Cookbook.

Cream 1/2 cup butter, cup sugar. Add 2 beaten eggs, 1/2 cup flour, pinch salt, 2 tbl Kentucky Bourbon (teetotalers can use tea vanilla but it is not authentic). Add cup chocolate chips, cup chopped pecans. Stir well. Pour into partially baked 9" pie shell. Bake at 350 degrees 30 min, or until center is set.

Serve with whipped cream or vanilla ice cream.
