Since you posted twice I take you want two fillets. Sounds like you want the animal with a bad sunburn and still moving. Call it bovine sushi?
One will usually do just fine, so long as it's paired with a 12-ounce tail ;^)

That would be when I cook it with a dark red, cold center as opposed to a bright red, cool center. The former works best with USDA Prime, the latter can be prepared (with care) from USDA Choice.
