In the '70s there was a restaurant in South Jersey that tried to cater to pro athletes and other big eaters from the Philly area. They started with real top quality prime ribs, not the lower quality, unfinished stuff found in the supermarket. According to my meat purveyor, they furnished 22 to 24 pounds with the deckel off, a 109a I believe. Most places that specialized in prime rib would get 15 cuts - 1 per bone plus the extra end; they got 7.

LaCieneca Blvd. Mighty fine as is their place in Vegas.
Mighty fine grub.
Better than Ruth Chris or Mortons.
