Those 600 or so ‘laws’ you talk about did not come through Moses. Those were ‘laws’ that were of the Pharisees. Many are still ‘practiced’ or ‘enforced’ today, of course.
The first ‘law’ was ‘do not eat of the tree...’ - God’s law.
The next ten, ‘The Ten Commandments’, were through Moses, but also God’s law.
The 600 or so that the Pharisees imposed on others, not necessarily on themselves (like the leftists in the US Congress) were not God’s laws.
Jesus (Yeshua) simplified all of that - Love the Lord your God with all your heart, and love your neighbor as you love yourself.
Jesus said the whole law was Love.
Psalm 147:19-20 “He declares His word to Jacob, His statutes and His laws to Israel. He did not do so to any other nation, of His laws they were not informed.”
