Burnt? They are supposed to be fried, and I hit them with lemon and a shot of tobasco.
Leave anything in frying oil long enough and it will burn.
In that part of the country (NE Ohio/Western PA) it seems that the preferred state of any creature that walks, swims or is feathered is to reduce it to ashes before serving.
