The health beef over barbecued meat

Meat on the grill is as much a part of the Fourth of July as fireworks and American flags. But it is also reputed to increase cancer risk in unsuspecting patriots, thanks in part to chemical compounds formed when meats containing muscle — including beef, pork, poultry and fish — are cooked at very high temperatures.

The class of chemicals known as heterocyclic amines, or HCAs for short, were first discovered in the 1970s by Japanese scientists, who noted that compounds in the charred parts of cooked fish and meat were capable of damaging cellular and bacterial DNA in test tube experiments.

Why do these self-appointed food Nazis make it sound like Americans would live forever were it not for their disastrous food choices? Someone needs to inform them no one lives forever. I, for one, will continue to enjoy grilled and barbequed meat until I take my last breath. As a friend once told me: Eat right, exercise... die anyway.

The Ad Counsil just started running radio ads urging people to boil their steaks. The first time I heard the spot, I couldn’t believe what I was hearing.

If you want to live a long and healthy life.....then pick the right parents before you are born.

Good genes beat clean living every time.

On a more analytical note, this is really another example of a disturbed outlook of our obsessed culture where we must make everything in life 100% risk free. My personal opinion is that these thinkers feel guilt and angst if they have any pleasure or enjoyment in life. It’s sinful (in a liberal, secular way) to have pleasurable experiences in life.

It should be noted that the harmful organic compunds in grilled meat are all easily diluted in an alcohol solution.

Sure. Be forewarned. Lexington's peach cobbler and caramel pecan ice cream is highly addicting. I was in rehab for a month after last year's festival, and my cardiologist still won't speak to me.

Maybe cooking meat over fires led to man's rise...

In all seriousness probably. Cooked food gives you more calories for less effort which meant less time spent chewing food and more time doing other things.

We are the only species that cooks and we all cook. Forget tool making, cooking is what made us who we are.

I think advice from liberals to conservatives on how to eat healthy should be put in the same category as advice from liberals to conservatives as to how to have a healthy economy.
