If you think retail ought to be without risks you have been improperly informed.

There's a reason the old time stores accepted all deliveries in the front, then put them on shelves behind the clerk or proprietor for his sole control.

Modern sales methods are based on probabilities of lower costs, higher profits, and losses (both mistakes and thefts).

You elect to use modern methods or old fashioned methods.

When you do that you accept the risk of loss as well as higher costs and lower profits.

Now that is an intersting legal concept: the grocery store assumed the risk when it placed the sandwich on the shelf. But what about the person assuming the risk when eating it while strolling the aisles?
