So does music.

They talk about this as though it’s a problem, but can’t tell me how I store and retrieve memories/images/smells/music/etc.

It isn’t “disruption”, it’s the body following the spirit. Practice piano and the same thing happens. Study for the London cab driver exam and the same thing happens. Immerse yourself in porn and the same thing happens.

"We are finally being told what clinicians suspected for some time now, that white matter abnormalities in the orbito-frontal cortex and other truly significant brain areas are present not only in addictions where substances are involved but also in behavioural ones such as internet addiction."

Doesn't sound to me much like learning to play the piano.

How's this: the brain changes they describe are quite different from the brain changes that accompany learning. (You might be right about the porn.)
