The heck they don't. Most do declare their sexual orientation. I have a brother in law that's a Friar (monk).
He had been gay his whole life, before he chose this celibate life.
They all have to go through a long major interview process where they get into everything including your sexual orientation.
A lot of the Friars are also Priests. In fact, he is still considering becoming a priest too. He said that living a gay lifestyle before does not automatically disqualify him or anyone else from becoming a Friar or a Priest.
Yah, but there seems to be an age old culture of homosexuality and sexual license among Catholic priests that has traditionally enjoyed protection from investigation from top levels of the bureaucracy.
When I was a student at St. Mary’s College in the 60’s, I recall a series of incidents in which a Christian Brother hit on me hard and even stalked me after I had transferred to UC Berkeley. He had been doing this to other students for years and at one point extolled the virtues of becoming a “Brother’s Boy”.
I later learned from a friend that he had also been the object of this Brother’s unwanted attention. Brother Robert of Mary, Christian Brother educator, was a chronic and unrepentant homosexual recruiter and an enabler and caused me to lose all respect for the clergy.

It’s not like they announce to the world that they like little boys. Sick bastards. The church needs to get rid of them, put them out on the street.

I would have called the police though. That priest tried to turn the family against the boy in the name of Christian “forgiveness” is why I would bring the police in immediately.
Church officials and offenders have twisted this aspect of Christ’s teaching to avoid paying for their perversion and crimes against innocent boys. They need to be stopped and punished.
The boy scouts do not permit homos access to boys for a reason. The Catholic church must reject homos from the priesthood if they want the homo sex abuse of boys to stop.
When an applicant admits he’s homo, he’s telling them he’s got a serious sexual disorder. Experience shows that sexual disorder acts out in the authority of the priesthood against other males. Further, it is a faith killer.
