Mexico scrambles to cope with egg shortage

The Mexican government is battling an egg shortage and hoarding that have caused prices to spike in a country with the highest per-capita egg consumption on Earth.

A summer epidemic of bird flu in the heart of Mexico's egg industry has doubled the cost of a kilo (2.2 pounds), or about 13 eggs, to more than 40 pesos ($3), a major blow to working- and middle-class consumers in a country that consumes more than 350 eggs per person each year. That's 100 more eggs per person than in the United States.

Egg prices have dominated the headlines here for a week, spurring Mexico City's mayor to ship tons of cheap eggs to poor neighborhoods and the federal government to announce emergency programs to get fresh chickens to farms hit by bird flu and to restock supermarket shelves with eggs imported from the U.S. and Central America. …

I guess I'm unusual, then. There are days when I eat 4-6 eggs or more. Love them scrambled, over-easy, poached, soft-boiled, hard-boiled, dropped into soup, deviled and in a salad.

I love eggs too, they are pretty much my fave food. There are many days when I’ve eaten eggs three times in one day. Yes, my cholesterol is through the roof!

I guess we are glad we are not in Mexico, eh?

No, I wouldn’t want to live in that sh**-hole. Especially now with all the killings, kidnappings and drugs. Much rather be in Cebu or Singapore.

Eggs are a cheap source of protein, especially if you can keep chickens. Sounds like times are getting tougher down there and people can’t afford another source of animal protein. Back to beans and rice when you can’t afford eggs any more.

Or mix in some scrambled eggs with the rice and beans. With some veggies added as well, it would be a nice family meal.
