I’ve tried a lot of different brands of bacon over the last few years. I don’t normally buy meat at Walmart, but they carry Farmland bacon which we really like and the price is hard to beat. I put a bunch in my freezer. Also, I found it’s a myth that bacon won’t last more than 6 months in a deep freeze without going rancid. I’ve thawed and cooked bacon frozen over 2 years and it was still fine.

When it's almost done, take it out, brush with maple syrup, and return to the oven for a few minutes more.

Very interesting, I like that idea a lot.

I think 6 months is for pork (uncured). Bacon is cured so it will keep a good long time.
I buy BJ’s brand bacon (box of 3-1 lb packs) works out to about 3.30 a lb I think. Expensive but still way cheaper than the grocery store.

The USDA website says 4 months for bacon, but 6 for uncured. Go figure. I delved into the issue when I had a lot of frozen bacon that was about 2 years old, and stumbled across a few websites that said don’t use it after 6 months. I dug a bit deeper and found many anecdotal reports that people found their bacon was quite all right after several years frozen. I think the USDA just wants to keep us consuming with some of their magic expiry dates.

The same Austin Statesman had an item today about a state sponsored hog hunt where the county that kills the most feral pigs gets a $20,000.00 prize...

“A competition among participating Texas counties to kill the most feral hogs and to educate the most residents about the animals starts Monday, and Hays and Caldwell counties are getting ready.

Both have offered a $2 bounty per feral hog tail to encourage people to participate in the program, a grant competition administered by the Texas Department of Agriculture.

Counties can collect points during the Hog Out County Grant Program from Oct. 1 to Dec. 31 for the number of feral hogs taken and the number of people who participate in an educational course to learn about the animals.

The county with the most points secures $20,000 in state funds to implement a plan to reduce the feral hog population. The second- and third-place counties earn $15,000 and $10,000, respectively. Other participating counties receive an award based on how many hogs were killed.”

I tried store bought maple bacon. It ended up being fed to the dog because it tasted like chemicals. I bet bacon made with real maple syrup put into Belgium waffles is awesome.

I agree, that seems off, 4 months. Not sure if I’ve eaten bacon older than 6 months but I’ve always kind-of had the attitude bacon never goes bad. I’m sure I’ve many times eaten bacon older than 4 months. Usually we eat a lot of bacon, doesn’t have the chance to get very old!

It is. Real maple syrup is more expensive, but worth it. Waffle with strawberries, bacon and maple syrup is awesome.

Nom, nom, nom. I only use real maple syrup. Sadly, I haven’t been able to get waffle batter not to stick to my non-stick waffle plates. I gave up after the 3rd try of huge mess, so it’ll have to be pancakes instead. Strawberries and bacon- 2 very versatile foods.

When my wife does waffles in the waffle-maker, she sprays with Pam. They come out fine.

We have a dedicated electric waffle machine. It might be that your waffle plates are not getting hot enough. See here.

Yeah, I’m pretty sure the problem was them not getting hot enough. I’ve vowed I’m not getting one more kitchen appliance though. I just bought a deep fryer for my daughter who decided to move out. I’m trying to decide which other child to send it to.
