Due to my intense and abiding interest in trying to copy confections without using wheat, barley or rye products, I encountered TWINKY STUFF ~ first, using the very finest grind of white corn flour short of being labeled 'corn starch', mix in about 1/4 as much tapioca, a full tea-spoon of baking powder for every full cup of mix, bunch of olive oil ~ now that's going to vary by the quality/characteristic of the oil ~ and some acidophilous or lactose free milk.

Some vanilla ~ extract in alcohol preferably ~ and, for non diabetics, you can put in sugar ~ and i have no idea how much of that you need.

You can bake this like any cake, or in a pan, or one of those little electric cookie/cake baker things ~ $20 at jc penney.

it should end up the same color, taste and texture. if your mix has a corn taste to it what you need to do is sprinkle some crushed red pepper into the mix ~ it'll kill the corn taste!

Then, the cream mix ~ that's something i haven't quite matched but i prefer light cream cheese here ~ and i make them like little pancakes.

Years ago we made lebenteengazillion d'oro yaki's for a Japanese folk festival ~ basically a Portuguese style small pancake filled with sweet rice and red bean mixture ~ but in the end little different than a Twinkie ~ there are several recipes for these things so you might be able to try them all to see what comes up with the best taste ~ for you!

We spent hundreds of hours getting the sweet rice and red bean mix right ~ you must first boil the beans, but most of the rest of the process can be handled well in any microwave.
