I’m going to a meeting of the IAP tonight - “Indiana/Armstrong Patriots”. It’s a ‘where do we go from here” meeting. Apparently they got an overwhelming response and had to reserve a larger venue! People are NOT happy after this election!
Made this for dinner last night. Very simple and mrs p6 and BIL thought it was great. Nice change from a tomatoey meatloaf
Amish Swiss Meatloaf
1 egg
1/2 c. evaporated milk
1/2 tsp. rubbed sage
1 tsp. salt
1/2 tsp black pepper
1 1/2 lb. lean ground beef
1 c. Ritz cracker crumbs
3/4 c. grated Swiss cheese
1/4 c. finely chopped onion
2-3 strips bacon, cut in 1” pieces
Preheat oven to 350 degrees. Beat the egg in a large bowl. Add evaporated milk, sage, salt and pepper, and mix. Add beef, crumbs, 1/2 cup of the cheese and the onion; blend. Form into a loaf and place in a 2 quart rectangular baking dish. Arrange bacon pieces on top of loaf. Bake 40 minutes. Sprinkle remaining cheese on top and bake 10 minutes longer.
Yummy! Got all the pertinent ingredients - beef and cheese!

I love the taste of sage...that sounds really good. I’ll have to try it :). I make a non-tomatoey meatloaf using bread or cracker crumbs and Stouffers Cremed Spinach (and a little diced onion). It’s moist and different too:)
I’m going to send this to Quinn...it’s about the Costas debacle. A FB friend pointed out that Hank Williams Jr. Got let go from ESPN Monday Night Football (with a winking approval of the NFL) for voicing his own political opinion (BUT NOT) as a part of MNF for being disparaging of Dear Leader. Costas, ACTUALLY ON SNF, spewed his political beliefs...with NO admonishment from NBC or the NFL. Some opinions are more equal than others. Costas HAS to go.

One more day of balmy weather...I could get used to this 60 degrees in December.
