Immigrant Moms Face Challenge of Adapting to U.S.-Type Meals

Latino immigrant mothers, especially those who live in rural areas and subsist on low incomes, face "serious challenges" to preparing nutritious meals, according to a new study.

The study, published this week in the Family and Consumer Sciences Research Journal, says that Hispanic mothers have problems when they want to serve healthy, nourishing food to their youngsters as they confront "new food environments."

The research was carried out by Kimberly Greder, PhD, of the Department of Human Development and Family Studies at Iowa State University, together with Flor Romero de Slowing and Kimberly Doudna, also of ISU.

They chose to immigrate here because conditions were better than where they left. What were they eating before they came here. All groceries have a variety of cheap nutritious food. Mercy. Funds for studies need to be cut severely!!

This is just another trial balloon for another welfare program for illegal immigrants.

The party of Santa Claus is making sure that the Latino vote grows and grows.

Free money is the Democrats trade mark. Too bad that it is driving the economy in to the dirt.

I'll bet they don't find it a "challenge" to adapt to US-style food stamps.God knows Osama Obama's *aunt* never found it a challenge.

Are they talking about immigrant immigrants or illegal immigrants? If they’re illegal then they get all the substance they need from the government (read taxpayers).

There are still some regionally “restricted” foods here in the USA. Things like “good” Pasties (not nipple caps) are still hard to find outside northern Michigan, Wisconsin and into Minnesota.

This sounds like hogwash to me.

Yes, it’s going to be difficult to find the exact same ingredients you are used to in a different country. But come on now. Beans, rice, tortillas, etc. are available in nearly every grocery store or supermarket you’ll find these days. The offerings may be “Americanized” but they are there.

Furthermore, places like Wal-Mart now carry a lot of specialty items in their meat departments and the like. Tripe for menudo, Queso chihuaha, etc.

Beyond that, there are Mexican markets in most decent sized cities. Other Latin specialties are admittedly rarer, but so what? If the ingredients aren’t quite the same as back home, do what the Chinese railroad workers did over a century ago: adapt. Chop Suey isn’t a native Chinese dish, but it kept a lot of Chinese workers in America fed.

I hate to sound off like this ,but if they stayed in their formally familiar environment,they wouldn’t have a problem,now would they?

BTW, this mama made tacos for dinner yesterday. Last week, we had several meals from a pot of beans and a pan of cornbread. Where's the cultural difference? Aside from Native American fare and the hamburger, what dish hasn't been brought in by immigrants?

If these people live in rural areas, why can’t they start little vegetable gardens? I’m here in the northeast ‘burbs and I’ve got one.

Greder and her collaborators maintain that the solution to this problem should be provided by family and consumer science professionals - they should be the ones to create opportunities to introduce immigrant families to certain existing programs such as vegetable gardening techniques.

Follow the money. The study was most likely funded by your local "family and consumer science professional"...whatever the hell that is.
