No surprise Spielberg left it out, it doesn't fit his domestic political narrative. However if you poke around a bit in the narratives of his survivors, and I believe his wife, you'll learn that left out of the movie was the fact that Schindler accumulated a substantial arsenal for the use of his workers. Modern arms in the context of the conflict, thought to have been acquired both through channels available to him through the Reich to protect his factory, supplemented by purchases from the Czech underground. Carbines, pistols, automatic weapons, some grenades. Prisoners were taught the mechanical operation one at a time, and I believe organized in squads of five. Amongst his prisoners were Jews who had served in the Polish Army, rumored to have been selected for that purpose.
Rounding up Schindler's Jews would have cost many German lives.
Of cours armed Jews, or armed anyone, doesn't fit Spielbergs mindset, so you won't see it in the movie.
For anyone (probably not on this site) who questions the recollections of survivors, it's in Thomas Keneally's book of the same name, which the movie is based on. Odd Spielberg didn't read the book.

I feel certain that Spielberg didn’t read Keneally’s Book, or if he did, he ignored it.
One of Schindler’s most interesting attributes was that he was an avid motorcyclist. He not only raced the European Circuit in the years before the War, he also designed and built his own bikes.
While this little fact seemed to mean nothing to Spielberg, it served Schindler’s Jews very well. A group of SS on bikes showed up at the factory to round up any retreating Jews and kill them, as the Allies were approaching. Schindler engaged them in Scooter-Talk, Gassed up their bikes, and sent them off in a haze of camaraderie. They never knew of the few hundred Jews who were hiding just behind the factory wall.
That would have made a terrific movie sequence, but for some reason it didn’t fit Spielberg’s agenda, so it was never mentioned.
