Actually, you don’t even have to show it to a peace officer anymore. (But, they will know you have one if they run your ID.) My local CHL instructor says you don’t have to show it to anybody.
Dang I thought it was Central Hockey League.

What harm do you imagine will come to you from your giving them copy of your license? Especially if it is given in the context of them allowing you to carry on the job?
“They” are not allowing me to carry on the job, the law is. It’s a matter of principal, they don’t the authority under the law.
