Venom is probably like any toxic substance it depends upon the concentration of the venom injected, the age and health of the victim
From everything I've read on the subject, those are the two important factors. (When I moved to rattlesnake country, I did a bit of research. Have killed 4 already this spring, and seen a half-dozen more on the roads. Shaping up to be a bad summer for rattlers here.)
Rattlers don't always inject much venom when biting humans, since they're not hunting us (too big to eat!) and only defending themselves. Baby rattlers, however, haven't yet learned to control their venom flow and are therefore much more deadly.
