The thinking is that since the cattle are not stunned, it is a “worse” death for the cows. Having seen Kosher slaughtering plants, it is basically old fashioned slaughtering. The same thing in many ways to what my grandfather did.
Wouldn't want to do it to a steer hanging in mid air though. Great way to get kicked.
I’ve not seen any Kosher killing, but I have seen Moslem halal killing of goats, cows and chickens and it was cruel. The Moslem slit the neck of the chicken and dumped it in a bucket to scream and drown in it’s own blood. the ones with the goat and cow were less cruel, basically grabbing the animal, holding it down and slitting it’s neck
