I don’t blame her for being upset... if she gave good waitress service. If she was in his face (so to speak) about her life style, that’s not good service.
But, if she was efficient and polite, she deserves a tip, because in this country restaurant wages are so low that it is presumed tips will make up part of the income.
That said, there are selfish customers who don’t tip, regardless of the excuse. Everyone who’s waited has been stiffed.

If you think your employee isn’t making enough, pay them more, it is simple.
“Selfish customers who don’t tip” (who pay exactly what they owe) ... I suppose the business owner who doesn’t pay enough aren’t selfish at all.
