My use of the quotations around the word "market" indicates that I recognize that libertarians have a belief system about what a market is and what it does that doesn't correspond with reality. The belief that "the market" can somehow guarantee food safety, despite an utter lack of mechanisms to do so is just that--a belief. In reality, the market is the economic system--it is very good at setting wages and prices. Just as I wouldn't expect a debate about the best way to grow tomatoes to be settled by who can swim the fastest, I wouldn't expect the market to be able to determine whether a particular food product is contaminated, because it is the wrong tool for that.
