Decades ago, my Great Uncle Alfred was a champion rabbit grower. He wanted to do the same thing. It just doesn’t happen; people aren’t interested in rabbit meat enough to get the cost down.
Depending on what you feed them, rabbits can be raised for meat for about .50 cents lb to $2 per lb.
I’d figure closer to $1.25 lb in the dressed rabbit. As a bonus they are super fast and easy to butcher.

I’m an LA native but, in about 1969, my BF and I drove to Colorado among other places.
We were shocked to see fried rabbit franchises instead of chicken.
So I think this has been going on a long time and is more wide spread than thought.
