That’s how I cook my eggs, almost every morning :)
I get my olive oil from an italian grower/family, in Napa. Absolutely the best varieties.

Cooked egg in Olive Oil, Greek Style Hi Nikos....I am having the same,...but with a turkey egg
We had four turkeys last year....the two noisy ones we put in the pot at Thanksgiving.
The other two must have realized that the were reprieved
and as a reward to us....started laying eggs in late January.
Makes a family omelet with home made Feta cheese from our goats. 
A Turkey egg is like a chicken egg....but double size.
