It happens at Walmart, too. So far every Mohammed and Amahl has scanned my sausage and bacon, but I know people who have had to scan their own pork products.
I’m ready with a response in case I’m ever told to scan my own groceries. I suppose that means I never will!

Remember, K-Mart coming out of bankruptcy wasn’t a retail play, it was a real estate play. They made a fast killing on what they could easily market, let leased locations go as leases expired, and made some money from retail on some of the stores. They plowed money into the Sears acquisition, and apparently did try to make that work as retail.
