Back when I was managing an Outlook server, it would not just flat out stop sending/receiving mail if you didn’t supply it with a valid security certificate. You could use a “self-issued” certificate instead of going through a service, but it pretty much demanded something or it would stop working.

There probably is some workaround to turn it off, but it wouldn’t be some button you would accidentally press and not notice, that’s for sure.
