I’m personally not sure how much polls reflect reality vs how much polls influence voting by influencing the public a perception of reality.

I am sure there is a certain portion of people who want to “pick a winner.” For whatever reason, I have seen people who think like “he’s losing anyway, so I may as well vote for the other guy.” So I’m sure polls have some degree of self-fulfilling prophecy effect on the outcome.
