Not hard at all. Takes about a week to brine and a way to smoke it. Youtube has lots of tutorials. Recent data from the USDA shows that 2016 inventory...is down 35.6 million pounds from 2015 levels.

If there is a shortage of bacon, that will mean a shortage of sausage, ham, pork chops, hotdogs, pulled pork sammys, fried pork rinds, chorizo, and pickled pigs feet.

None of that will come to pass.

Pork belly is just that... raw pork. Salt pork is pork belly that has been brined or packed in a salt/sugar rub for about a week. Bacon is salt pork that has been smoked. It’s the smoke that makes it. Same way, corned beef is brisket that has been aged in a brine. Pastrami is corned beef that has been smoked.
