Middle Eastern is not synonymous with “Muslim.” The Middle Easterners who settled in Latin America (Lebanese, etc.) were generally Christians of one kind or another, and simply brought Middle Eastern food traditions with them - which, because they often involve quickly cooked meats and a flatbread, fit in well with what the Latin Americans were already eating.
