Our 2 local grocers(1 large Texas chain, 1 small town chain) had meat shortages about 1 month ago when folks from Houston and San Antonio came through cleaning out meats prior to “rationing”. Our local farmers, ranchers, feed stores, and actual leaders out here began “processing” a few of the thousands of cows, chickens, hogs, and other farm products to resale direct to local residents only via feed stores and other outlets.

People have been “processing” livestock outside of meat processing plants since man started roaming the earth. That’s what butchers used to do. You’d think the USDA would loosen its regulations about who gets to process meat, given the situation at hand. It’s not like farmers lack the ability to “process” livestock.
