Yes a dual fuel is the ticket - gas cooktop and electric convection. Yes that is pricey - $5k+ for the stove. But a middle tier home could budget that into construction.

All the higher tier homes I work on have seperate gas cooktop’s - usually Wolf and built-in electric double oven
or oven/microwave combo’s. Lot’s of drawer type microwaves which I like very much - easy to get hot pots out of without the possiblity of spilling hot stuff all over yourself.

I live in Sicily. I paid ~$600 for the stove I have. Caught it on a flash sale down from $1600. Big stovetop, big oven and built like a tank. Nothing digital - even the timer’s mechanical. My wife says that when we move the only appliance she insists taking with us is that stove. Lol! Yeah, I was a builder for years - noticed that trend coming on strong around 2000.
