The Soviets used sheet metal and fencing around the T34’s when rolling into Berlin. The Panzerfausts worked anyway. Modern antitank weapons have primary and secondary projectiles to defeat this type of pre triggering.
Presumably those trucks can be neutralized by cheaper alternatives like heavy machine guns which are probably more plentiful.
