It is not a race against dwindling supplies of ammunition because the Russians have the world's largest production capacity right there in their own country. Unlike the U.S. they didn't send major parts of their supply chain to enemy countries.

If we are going to hit them, it has to be quick enough, and hard enough that they cannot hit back. Or it has to be sneaky enough and disorienting enough that they never quite get the resolution to hit back.
I am unconvinced that our guys are smart enough to take either path. I would be really happy to be wrong in that assessment.
"Hit back" in this case means "fire 6,000 nuclear weapons". Maybe 300 of them will actually work. That is quite enough to usher in a "New World Order". We might even "win" such an exchange. It would be a pyrrhic victory.
The inevitable Chinese incursions into Russia (Siberia) while the Russians try to deal with insurgency in conquered provinces of Eastern Europe will likely be what destroys Russia. They will not be able to hold what they take. They do not have the native population to do that.
Our problem is how to stop the Russians without throwing them into a death-spasm use of nuclear weapons. It is a difficult problem, though I believe there are solutions.
The people we have at the top of our military commands and the current political leadership are not the people who can solve this problem (IMO).
Even so, they are using up their stocks faster than they can replace them. They will run out. The question is whether their opponents will run out first. Shipments from Europe and the US have kept the Ukrainians in the war, but it is not enough.
The Ukrainians will run out of soldiers before the Russians run out of soldiers.
Unless the Chinese backstab the Russians. That seems unlikely, but the Russians have learned to trust no one.
Yes, we are actually in worse shape as far as run rates. When we run out of "stuff", the Russians will be able to out-produce us in critical military supplies for land warfare, exactly for the reasons that you mentioned.

No one would win such an exchange, It was pointed out some years ago when it was feared India and Pakistan might use their 50 nukes each, that the results would be civilization destroying.
