Although wood-fired ovens have gained a lot of attention in recent years, those who prefer coal pizza ovens stand fast in the assertion that their cooking method is best. Sally’s in New Haven has a coal fired oven burning since the 1930s. It is part of what makes Sally’s Apizza Sally’s. There is no scent or aroma better for the soul than great pizza cooked in a coal oven. Hickory smoked ribs are second place.

Renders a different taste.

They definitely exist and some small mom and pop shops exclusively use them.
