I had the best chicken mole I have ever eaten at the Fonda de Santa Clara restaurant in Puebla in 1989. But I don’t plan to go down there again anytime soon.

I used to get fantastic green chile entrees at restaurant in La Fonda in Santa Fe, NM. Beautiful adobe looking hotel, but I’ve heard it was made from cinder block.
