In my jurisdiction, if someone stays for 30 days, they are considered tenants (even if they have no lease and paid no rent) and can only be evicted with a 30 day notice.

They can, of course, leave voluntarily before then.

I wonder how easily these migrants can be evicted if the hosts change their minds?

Where I live, that’s true. An eviction notice is filed. If the tenant ignores the notice and remains, it usually takes another 30 days or so to get a sheriff’s order to physically remove him.

Ah, but suppose the tenant files an appeal? Then the process can drag on for months. And all the while the tenant is trashing the place.

The icing on the cake is that the illegals in the story certainly did not put up a security deposit. So the homeowner will eat all the repair costs.
