SO how do i make lemon curd??

Lemon curd. Yield: 24 ounces.

Sugar 10 oz.
Aigs 7 ounces (6 1/2 aigs probably)
FRESH lemon juice 2 oz.
Butter, diced 5 oz.
Peel a lemon and grate it 1/2 each.

Whisk together the sucre, eggs, and lemon juice and peel in a double boiler until the mixture is thick and reaches (exactly) 165 degrees F.

Add the butter, a bit at a time.

Don't scramble the aigs.

Sheesh!

eggs = aigs (here in Texas anyway)
sucre = sugar. Why that happens, we will not evaluate.
