Lamb and mutton are very under-appreciated. Tasty!
Funny, when I was a kid back in the '60s, lambchops, leg of lamb, and good old mutton stew and barbeque were common bills of fare. Rare now.
I love lamb and cook it every chance I get.
Mutton is a bit more difficult - tends to be tough - I use it in stews, mostly, or ground.
