All the earth-dependent animals died, but not the fish. That is why we are still getting dinosaur fish turning up. Also I believe dinosaurs were on the Ark. They gradually receded as the earth's population grew and the climate made it hard to get a good meal.

The real issue is - this is revealed in the Scriptures, not proven by a scientist. However, it is not surprising to find actual Biblical events leaving evidence behind.
