The faith in the creeds was known and taught by Jesus and the Apostles before they were written in the councils. That’s what makes ‘em creeds.
The majority of non-Catholics have followed them since their beginning; others rephrase them in their own particular confession.
You’re welcome to have your own creed of course.

Anyone who is trusting their faith in the creeds or their fidelity to them, for salvation is going to be sadly disappointed.
Acts 4:11-12 11 This Jesus is the stone that was rejected by you, the builders, which has become the cornerstone. 12 And there is salvation in no one else, for there is no other name under heaven given among men by which we must be saved.
