I can’t respond to these silly comments. So literal. It’s a matter of faith.
Because the species retain their accidental appearance. Thus, if you put the consecrated bread and wine under a microscope or tested them chemically, they would still appear to be bread and wine. So they still react the same with the human body as if they, in the instance of the consecrated bread, had gluten in it.
So chemically speaking they still “appear” the same, thus still react the same with the human body.
But it’s substance has been changed. Hence “Transubstantiation”.
It’s like a screwdriver who’s handle is used as a hammer. It still appears to be a screwdriver, but it’s substance is a hammer. It is a hammer, in substance because that’s what it does (in that instance).
Same with the consecrated species. They appear the same, under any scientific test you can imagine (with rare exceptions like the miracle at Luciano). But their substance, what they actually are, has been changed.
