how have thousands of Americans "detained" in prisoner of war camps managed to survive sane.Sadly, not all did.
OTOH, a few (Brits, anyway, I'm not sure about Americans) successfully feigned mental illness to win release from the Germans on medical grounds. This last was my first thought when I read this.

That goes without saying, but to assert that policies at Gitmo are derived to render inmates mad is a stupid statement from the Observer writer and/or the detainee's lawyers.
