Carve the belly into sashimi and eat it raw with ponzu sauce.
If you have to cook it, just sear the outside really fast by turning it in a super hot skilled with sesame oil for five seconds per side.
Raw stuff is bad...all meat must feel the heat...I believe in BBQ!
