Why is the mother’s typed name different that the signature? Wouldn’t she have had them type it the same way she was going to sign it?

The box clearly is labeled “Maiden Name of Mother,” that’s why...

The mother's name is always the mother's maiden name. The signature is just the legal signature. It is not a contract.

Mine has my mother's maiden name, but she signed it "Mrs. James C. Smith" [I changed my actual father's name].

The mother's name is always the mother's maiden name. The signature is just the legal signature. It is not a contract.
